After completing your 12-hour shift as a nurse, you don’t exactly feel like making any food. All you want to do is eat immediately or jump on some fast food. The problem is that fast food isn’t too healthy and you may not even know any easy-to-make meals to prepare.

Before continuing, we must reiterate that as nurses, we need to eat healthily. You cannot be in charge of handing out healthy diet education to others and not follow suit. This is why you should consider these easy-to-make meals instead of buying fast food on your way home from work.

Eggs and greens on gluten-free bread with avocado and goat cheese

This meal is very healthy and you can be done preparing it in a few minutes. 

What you need:

  • 2 Organic Pasture Raised Eggs
  • 2 slices of Canyon Gluten Free Bread (or Sourdough)
  • Avocado Slices
  • Cherry Tomatoes 
  • Goat Cheese
  • Organic Greens
  • 2 tablespoons of Filtered Water
  • Himalayan Salt and Pepper

How to prepare:

Take these steps to prepare this meal:

Step 1: Toast your gluten-free bread.

Step 2: Add some goat cheese to each slice of bread. Less than one tablespoon is perfect for each slice.

Step 3: Add your avocado slices and organic greens.

Step 4: Leave on a flat plate and heat up your frying pan.

Step 5: Crack your eggs into the pan and add two tablespoons of water. Cover the pan.

Step 6: Remove the eggs once they have a light pink cover and place them on the bread slices.

Step 7: Add your seasoning and it is ready to be served.

Similar to the recipe above, this meal is very easy to prepare and will only take a few minutes.

What you need:

  • 3 Organic Pasture Raised Eggs
  • 1/2 Cup of Organic Cauliflower Rice
  • A Handful of Organic Greens chopped
  • Avocado Oil
  • 1 Avocado diced
  • 1/2 tsp chopped organic garlic (it may be less if you don't like garlic so much)
  • 1/2 Cup organic cherry tomatoes 
  • Himalayan Sea Salt & Pepper
  • Franks Hot Sauce

How to prepare:

Follow these steps to prepare this meal:

Step 1: Chop your organic greens and put them in some avocado oil inside a pan that is placed on medium heat.

Step 2: Add some salt and pepper and your whisked eggs.

Step 3: Add your cherry tomatoes and chopped avocado to the mix along with some hot sauce.

Step 4: Your dish is ready to be served.
